A HAPPY COW PRODUCES BETTER MILK
Rubber or water beds
80 per cent of milking cows have beds of water or crushed rubber, these last ones also have pillows to rest your head. The remaining 20 per cent have traditional bedding. All beds are cleaned daily and over them a biological disinfectant is applied. The surface of the bed should be padded so that the knees of cows will not suffer to the lie. Both crushed rubber water beds comply with this condition.
Classical music during milking
Milking time is a delicate moment for the cows. For this reason, in Arpon cows listen to classical during this process since it promotes relaxation and his willingness to be milked. Animal genetics
For more than 20 years Priégola not he joined their livestock animals from other farms since these would be capable of introducing diseases unknown to our cabin. Thanks to advances in genetics and artificial insemination, the rearing of livestock is done with native animals.
All the cows are born and bred on the farm. In addition, the parents of their future offspring are selected among the best stallions in the world, according to its genetic improvement tested, morphology, production, content of proteins, etc.

El Cow Comfort define a una serie de técnicas que se aplican en explotaciones ganaderas y que en su conjunto favorecen el bienestar y la tranquilidad de los animales. Estas prácticas que suponen una inversión considerable para el ganadero, a medio plazo repercuten muy positivamente en la calidad de la leche -alto contenido en grasa y proteína- y también en una mayor producción de litros. El confort es una condición imprescindible para la salud de las vacas y para que las mismas puedan producir leche de calidad. Como no podía ser de otra manera, en Priégola todos los animales disponen de espacio para caminar.
UNA VACA FELIZ PRODUCE MEJOR LECHE
Camas de agua o de goma
El 80 por ciento de las vacas en ordeño tienen camas individuales de agua o de goma triturada, éstas últimas cuentan además con almohadas para reposar la cabeza. El 20 por ciento restante disponen de cama tradicional de paja. Todas las camas se limpian diariamente y encima de ellas se les aplica un desinfectante biológico. La superficie de las camas tiene que ser acolchada para que las rodillas de las vacas no sufran al tumbarse. Tanto las camas de agua como las de goma triturada cumplen esta condición.
Música clásica durante el ordeño
La hora del ordeño es un momento delicado para las vacas. Por ello, en Priégola las vacas escuchan música clásica durante este proceso ya que favorece su relajación y su predisposición a ser ordeñadas. Se dice que esta técnica se aplica desde que unos monjes de la bretaña francesa en el siglo XIX, descubrieran que las vacas daban más leche si eran ordeñadas durante la misa, mientras escuchaban la música que provenía del coro de la iglesia.
Actualmente no hay estudios científicos que avalen esta teoría pero en Priégola estamos convencidos de que las vacas teniendo sistema auditivo, son sensibles a los acordes de la música clásica.
Sistemas de aclimatación antiestrés
La circulación de aire es muy importante para la respiración de las vacas. Un ejemplo de esto se aprecia en que tanto las vacas como los caballos se sitúan en el campo en los lugares más altos –que es en donde más circula el aire- cuando la temperatura sobrepasa los 15 grados. Los apriscos constan de un solo tejado alto, orientado al sur y con caída de agua hacia el norte, cuyo diseño está pensado para producir sombra en verano y facilitar la entrada de sol en invierno. Además, carecen de muros laterales con el fin de favorecer la máxima circulación de aire dentro de ellos. Cuando el tejado se calienta por la radiación solar, su propia inclinación propicia una corriente de aire que en verano permite a los cobertizos gozar de una temperatura de 4 a 5 grados centígrados inferior a la del exterior.
El ganado vacuno, desde el primer día de vida, soporta perfectamente temperaturas de hasta 20 grados bajo cero pero empieza a sufrir si la temperatura sube por encima de 22 grados centígrados. En verano, la bajada de temperatura producida por la corriente de aire de los apriscos no es suficiente. Por ello, PRIÉGOLA tiene instalados aspersores y ventiladores en la zonas de los comederos y de los cobertizos con camas individuales.
Los ventiladores y los aspersores se ponen en marcha cuando la temperatura supera los 22 grados y se paran cuando baja de los 20.
Primero, los aspersores se ponen a funcionar durante 20 segundos; a continuación, los ventiladores funcionan durante 40 segundos repartiendo el agua en suspensión. Este ciclo se repite de manera sucesiva, refrescando a las vacas durante el tiempo que están comiendo.
En la sala de espera previa al ordeño se emplea el mismo sistema. Además, cada vaca recibe una ducha al salir de la sala después del ordeño. El objetivo de estos cuidados es evitar que la temperatura de las vacas suba. Una vez que esto ocurre, es muy difícil bajarla si no refresca durante la madrugada.
ALIMENTACIÓN, GENÉTICA Y CONFORT
Los tres pilares fundamentales para obtener una leche de la máxima calidad sonla alimentación de las vacas, su genética y las medidas de "Cow Comfort".
Estos tres elementos son los factores determinantes para que el ganado esté sano, produzca leche de calidad y en cantidad.
Cuidada Alimentación
En Priégola hay una veterinario nutrólogo cuya misión es establecer el tipo de alimentación idóneo para cada animal según el periodo de vida en el que esté -terneras, novillas, vacas recién paridas, vacas preñadas, etc-. La forma de alimentar al ganado, es determinante para que sean animales sanos y su producción alta.
Priégola también asesora a otras fincas y cooperativas en España, ya que el sistema de alimentación que aplicamos en nuestra granja ha demostrado ser muy eficaz.
Genética Animal
Desde hace más de 20 años Priégola no incorpora a su ganadería animales de otras granjas ya que estos serían susceptibles de introducir enfermedades desconocidas para nuestra cabaña. Gracias a los avances de la genética y a la inseminación artificial, la recría de ganado se realiza con animales autóctonos.
Todas las vacas productoras nacen y se crían en la propia explotación. Asimismo, los padres de sus futuras crías son seleccionados entre los mejores sementales del mundo, en función de su mejora genética probada, de morfología, producción, contenido de proteínas, etc.
Gracias a todas estas medidas Priégola ha obtenido el título de Mejor Ganadería por Indice Genético de España (para granjas de más de 200 vacas reproductoras) en los años 2006, 2007, 2008, 2009, 2010 y 2012. Este título es otorgado por CONAFE, la Conferedración Nacional de Asociaciones de Frisona Española.

Receta de Mantequilla Casera con Nata Fresca Priégola
Receta muy sencilla para elaborar mantequilla casera.
INGREDIENTES: 1 Litro de Nata Fresca Priégola
PREPARACIÓN:
Vertemos un litro de nata fresca –recién sacada del frigorífico- en el bol de la batidora, poniendo el utensilio de batir.
Comenzamos a batir la nata a velocidad media-alta. Primero se forma una espuma en la que se aglomeran pequeñas gotas de grasa. Con la continua agitación, éstas se deshacen, se libera la grasa de la mantequilla y se forma una masa cada vez más compacta y con grumos que van creciendo de tamaño. “Se forma el grumo de la mantequilla”, así definen los especialistas este fenómeno.
Cuando los grumos han alcanzado un tamaño un poco mayor que el del guisante, ha llegado el momento de dejar de batir y separar el suero de la nata que se ha segregado, prácticamente carente de grasa, de la masa compacta. A este efecto, vertemos todo en un colador y lavamos la mantequilla con agua muy fría y la dejamos flotando en un recipiente con agua y hielo.
A continuación, para eliminar el agua, hay que amazarla con un mazo. Esto se puede realizar también a mano, con la ayuda de una espátula. Opcional: Llegados a este punto se pueden añadir hierbas aromáticas muy picadas (cebollino, eneldo, estragón, etc.) o bien una pizca de sal pero recomendamos que la primera vez se elabore sin añadir nada para probar su sabor natural.
La mantequilla elaborada con nata fresca merece una presentación adecuada: o bien se hace una lámina y simplemente se enrolla, o se prensa en unos moldes de madera, previamente impregnados de agua para que se pueda extraer posteriormente con facilidad.
Una vez concluidos todos los pasos se deja reposar en el refrigerador para que enfríe y ya estará lista para ser untada.
